Imagine enjoying a delicious three-course dinner with your choice of wine, right in the middle of one of the world’s most beautiful and unspoilt alpine wildernesses! Here at Retallack, we’re proud to offer our guests mouth-watering cuisine and a thoughtfully-assembled wine selection, all in the cosy surroundings of our remote timber-frame lodge.
However, we understand that you want more than gourmet food and wine during your powder holiday – you’ll also need high-energy meals and snacks throughout the day if you’re going to tear it up on the slopes. Like all passionate powderhounds, we know how important it is to stoke your engine at breakfast, refuel at lunch, and top up those energy levels après ski and board.
That’s why Retallack’s culinary philosophy is, “energy-packed meals by day…fine dining by night”. It’s all part and parcel of the ultimate powder experience!

Our Cuisine
Skiers and boarders begin their powder day with a hearty breakfast of breads, pastries and croissants; a selection of cereals and mueslis; fresh fruit; yoghurt; and a daily hot dish such as bacon and eggs, ham and cheese omelettes or french toast with strawberries and maple syrup. All breakfasts are served with your choice of juice, locally-roasted fair trade coffee and a variety of teas.
Lunch is served on the snowcat and on any given day can include a selection of “manwiches” (man-size sandwiches) and hot and cold drinks. We also supply fresh fruit, muffins and nanaimo bars so you can snack between meals if you get hungry.
After a hard day’s skiing, guests are welcomed back to the lodge with hot soup and crackers before a roaring open fire. If that’s not your style, you may prefer a cold beer as you share stories about your epic powder day in front of our outdoor fire pit.
The best dining experience of the day is saved until last – our gourmet three-course dinners. Our chefs use the freshest locally-grown and seasonal produce to create a meal to satisfy both the most robust of appetites and refined of tastes. In keeping with our emphasis on environmental sustainability, our kitchen also uses organic fruit, vegetables and meat wherever possible. It takes more time and effort to source ingredients the way we do, but we think our extra care and attention is reflected in the end result!
Dinner is served in our cheerful, 42-person dining room on long, refectory-style tables designed for lively evening conversation. Groups can also request a barbeque on the mountain-side with our chefs’ legendary buffalo burgers. Take it from us – these guys taste great!
Our Wine and Menus
Our cellar includes some of Canada’s finest wines, as well as a selection from Australia, California, New Zealand, France, Italy and Spain. Whether you prefer the smoky, gamey, herbal characteristics of the old world, or the fresh, fruity personalities of the new, we’re confident we’ll have a drop to delight your palate.
Because Retallack’s cat-skiing and boarding packages include all meals, our dinners follow a set menu plan. To give you an idea of what you will be eating with us during your stay – and whet your appetite – here is a small sample of the dishes we offer.

Our kitchen makes every effort to accommodate special requests. However, it is important that you inform us of any dietary restrictions or allergies well ahead of your arrival. Please discuss your requirements with our reservations staff when you make your booking, and we will do our best to cater for your needs.
